In a small frying pan, heat the salsa to near boiling. Break each egg into a separate small bowl and gently add to the salsa. Cover the pan and cook over low heat for about 3 minutes, occasionally spooning sauce over the eggs, and checking to be sure the eggs aren’t sticking to the bottom of the pan.
Heat the tortilla(s) either on a skillet on top of the stove or in a 350°F oven. Sprinkle the cheese evenly over the surface of the tortilla(s) and let it melt. Remove from heat and spread with chili. If you’re using lettuce, arrange it around the edge of the tortilla.
With a large spoon, carefully remove the eggs from the salsa and place in the middle of your creation. Spoon salsa over the top and garnish with olives, sour cream, and cilantro. Serve immediately.
